On June 11th Jerry and I headed to Santa Fe, New Mexico for "Toppers 2009". Seven days of fun and relaxation and we got to share it with our dear friends Skip and Terri.
We stayed at the Buffalo Thunder Golf Resort and Casino just north of Santa Fe.
The resort is new and the accommodations wonderful.
Our room overlooked this part of the golf course. Although it has only been around about six years Jerry said that it was very nice to play on.
More views from our room.
On Friday we got up and headed out for a day of golf at Paa Ko Ridge just outside of Albuquerque.
Getting the course instructions.
Jerry studying the course.
Terri and I drove the carts. My cart is to the right and this is just before I ran over Jerry's new driver. OUCH!! I'm really glad that he had already shared spending money with me!!
Practice!
Skip is getting ready !
Awesome par three!!
Putting it on the green.
PLAY!!
Has anyone seen my ball??
A very beautiful course.
Back at the club house. What a fun day! I hope that we can do it again!
More of Santa Fe to come.

While out and about one Saturday in late May we spotted the Jack -N- Grill on Federal in Denver. We immediately new this was the place to stop. In an area where restaurants line the streets, this place was the only one that looked packed! We made the block, parked and got in line.
Ash and Jerry enjoying chips and salsa.
Once inside, Jerry remembered seeing this place on one of the travel / food networks. Home of the 7 pound burrito. (We saw a couple share one). I had this giant Stuffed Sopapillas burger covered in green chiles. YUM! And yes I had leftovers!!

Amanda, our daughter, loves to race. So far during the 2009 season she has completed about five races and has about five more to go. The first weekend of May she raced at The Garden of The Gods in Colorado Springs and we cheered for her. Amanda and her boyfriend A.J. were so excited about the first race of the summer. We took them to eat at TGI Friday's when they got to the Springs the night before. Lots of carbs!

Cold and lined up ready to go. The temperature was about 38 degrees when the race started burr...........
The big hill!! Both start and finish for the 5K.
Lola really wanted to run!
All done! One down, 'bout a dozen more to go!!
Amanda with her first race t-shirt of the 2009 season.
WAY TO GO PITA!!!

Easter Sunday 2009

As we headed out for Church on Easter Sunday, April 12, 2009, I was thinking that the Easter Bunny could hide almost anywhere in our neighborhood! We had about 4" of snow and it was still coming down. So much for outdoor Easter Egg hunts!
Since we moved to Colorado in 1992 we have had several snow storms as late as Mother's Day but I think that this is the most that we have had on an Easter morning. Mother Nature is saying, "Don't put the sweaters away just yet."
On the way into Colorado Springs the snow turned mostly to rain and we figured that it would be gone by the time that we would head home. WRONG! This was our drive home. The weather guy on the radio kept saying " rain south of Castlerock over Monument Hill and into Colorado Springs". I wanted to call and tell him to look outside.
No one was out plowing the streets of our neighborhood.
The trees were loaded down and very pretty.
The Easter Bunny did not plow our drive when we were away. The snow was still coming down!
At 1:30 we had about 8" and it is still snowing as I blog. Our Monday morning commute may be a mess but our Sunday afternoon was just fine! Jerry cooked Italian, YUMMY!!
I am VERY blessed to have good cooks in my family and I realize that Ash, Alexis and Amanda got it from their DAD. I do have a few good dishes besides Mac-N-Cheese from a box and Taco Bell but Jerry is the Chef in our household. Here he is putting the finishing touches on our desert: hand made Cannoli shells stuffed with Ricotta cheese and topped with chocolate and pistachio nuts. You're right, to die for!
More finishing touches!
For our main dish he made Lump Crab meat Ravioli with Red Pepper Cream Sauce and Asparagus. We may not have this to often, crab meat is expensive! SO GOOD!
More cooking! For sides he made Italian Antipasto Salad and Wilted Spinach with Garlic and Baby Portobello Mushrooms. Just look at these plates. I know, next time you will want to come home with us for dinner.
The meal was wonderful and just look at the Cannolis. I'll take a snow day like this anytime!!
